Résumé

Enterobacter sakazakii occurs mainly in low-birth-weight neonates and other infants under 2 months of age, but can also occur in healthy infants up to 8 months of age and immunocompromised children up to the age of 4 years. This study investigated reconstituted cereals stored at 4, 12, 21 or 30°C for up to 72 h. The micro-organism did not grow at 4 and 12°C and the authors recommend that reconstituted cereals stored at 21 or 30°C be discarded within 4h.
