Résumé

In modified atmosphere packages, leafy salad vegetables can respire aerobically at partial pressures of oxygen somewhat less than 1 kilopascal, but anaerobic respiration is induced as oxygen pressures approach of 0.1 kilopascal. Providing low temperatures can be maintained, a partial pressure of 1 kilopascal is a useful lower limit for oxygen in modified atmosphere packages. Whether this is realized under practical conditions was investigated. Predicted values were less than 1 kilopascal, as were the measured values, which ranged from less than 0.1 to 0.3 kilopascal. The results are discussed and also how to achieve a target level of oxygen which is sufficiently low to delay senescence and yet not so low as to present a risk of anaerobic metabolism.
