Summary

The author revisits various phases (and describes their characteristics) in the development of refrigerating plant in France after the Second World War. Various types of foodstuffs are cited (vegetables, fruit, meat, dairy products, beverages, etc.). The Ministry of Agriculture, the Rural Engineering and Planning organizations and research organizations are emphasized. The author also describes the expansion of refrigerated storage facilities and distribution logistics, as well as the disappearance of industrial ice manufacturers and the expansion of refrigerated transport.
