Summary
The article presents the Polish dairy sector's adaptation to EU requirements on safety and hygiene standards for dairy products with respect to raw milk quality and milk production standards in farms, as well as technical adaptation. During the past ten years, the Polish dairy sector has made significant progress towards improving the quality of raw milk purchased for processing. The introduction of in-house control systems based on the HACCP system has raised the credibility of the dairy sector and the safety of dairy products. However, such changes have not taken place in all farms yet and the current modernization stage could create some temporary difficulties.
