Summary
The paper examines the indicators, influencing the post-harvest fruits and vegetables ripening indices (respiration increasing, ethylene educing, color, firmness and gustatory alterations) are established on the base of correlation analysis of experimental data. Their selection for practical application is made. Statica and dynamic models of ripening are worked out. A Universal Ripening Diagram TTPR for calculation and prediction of this process is suggested.
