Summary
Bananas, collected and transferred to Russia in the green state, before sale, are subjected to artificial ripening in special rooms, where the temperature must be lowered each day by 1-2°C (from 18 to 14°C). The article deals with the calculation of heat gains during the ripening of bananas. It is shown that the total heat load of refrigerating equipment during the ripening of bananas varies in time and has the maximum on the second and third day of the process.
