Summary
Changes are rapidly occurring with the introduction of controlled-atmosphere technology. The metabolism of transported products continues to be reduced by cooling, thereby extending the transport time. With controlled atmosphere, a further reduction of metabolism is obtained by the control of oxygen and carbon dioxide levels. The article describes the development of this technology for land storage and transport. A detailed bibliography is given.
