Summary

Muskmelon fruits were stored for 20 days at 10 or 15 °C and supplied daily with a 5-minute flow of air containing 5.1% CO2. Data are presented on changes in total soluble solids (TSS), acidity, texture, pH and SST: acidity ratio during storage. CO2 treatment had a detrimental effect on TSS content and texture, reduced acidity, slightly increased pH, increased the rate of colour change and increased colour purity.
