Summary
The sector's operators do not believe the market's growth potential will saturate in the short term. Sales in 2002 can only confirm this view as sales increased by 8.81 % in volume and 15.47 % in value. After having conquered the HORECA circuit, the frozen dough sector is now striking the traditional fresh bread-making sector in order to increase its market share. Frozen bread only provides small margins and distribution costs are high. The current trend is to produce large volumes in order to achieve economies of scale.
