Summary
This study was conducted to evaluate the potential value of predictive modelling in the estimation of the risk of growth of L. monocytogenes on packaged fresh green asparagus. The results showed that predictive modelling appears to be a useful tool and that asparagus should be kept at temperatures below 4 °C.
