Summary
This paper gives the results obtained following the boiling of water, sugar juices, wort and salt solutions in a pilot plant plate evaporator (heat transfer area 0.4 m2). Specified criteria relation is used in the evaluation of data from industrial plate evaporators for milk, juice and stillage concentration. An approximate fouling factor is calculated for the liquids.
