The author presents the limitations that are specific to refrigerated display cabinets, independently of the conditions under which they are implemented and used. In fact, there are many pitfalls to be avoided. This review would not be complete if the author did not present existing technical solutions, which enable the way refrigerated display cabinets operate to be improved: air conditioning, night curtains, supply of evaporators through modulated regulation, operation of cold rooms, defrosting systems.
