Summary
This article examines the influence of storage conditions (e.g. temperature and atmospheric composition) on shelf life of fresh coconut slices. Results suggest that, although the shelf life of packaged cut coconut is strongly dependent on temperature and atmospheric composition, the quality of the raw material also plays a very important role in maintaining high production standards, together with a satisfactory shelf life of about 14 days.
