Investigate apple mealy texture using instrumental methods.
Author(s) : TU K., BAERDEMAEKER J. de
Summary
Relatively fresh, non-mealy fruits did not show adhesiveness during texture profile analysis, but ripened, mealy fruits generally showed some. Internal air space appeared to be a good indicator of mealiness, although it varied between cultivars.
