Summary

This paper gives the definitions and some characteristics of ice slurry and ice slurry mixture. The advantage of ice slurry application for fish cooling is shown. A calculated modelling and experimental investigation of fish cooling of different species and dimensions using ice slurry were carried out. According to the calculations, from 0.3 to 1 kg of binary mixture is needed to cool one kg of fish depending on the initial fish temperature (at 0.4 ice concentration in the mixture).
