Summary

Ice slurry has attracted attention as an effective refrigerant for chilling and transporting perishable foods. In this study, catechin, noted for its sterilizing effect, was incorporated into the ice slurry to ensure hygiene safety, such as the prevention of food poisoning, during refrigeration and transport. However, as ice slurry flows through pipes for refrigeration and transportation, ice adhesion may occur on the pipe walls, potentially causing blockages. Past studies have demonstrated that the introduction of surfactants can inhibit ice adhesion, and a similar trend has been noticed in catechin-surfactant mixtures. In this paper, ice was produced with higher concentrations of surfactant to understand the adhesion force trend in ice that includes a catechin-surfactant mixture. The maximum value, obtained by dividing the reaction force of ice by the adhesion area, was assessed as the ice's adhesion force. From the measurement results, it is evident that at a catechin concentration of 0.015 w/w%, the adhesion force diminishes as the surfactant concentration escalates, then stabilizes when the concentration surpasses 0.1 w/w%.
