Summary

Spanish translation of an article presented at the IIR Meeting in Palmerston North, New Zealand, in 1993 (see IIR Bulletin, ref. 94-3869). A mathematical model of a modified atmosphere packaging system for horticultural produce has been developed. It predicts gas concentrations in produce and packaging, and, under uniform temperature conditions, respiration and transpiration. Tests have been carried out on apples packed with plastic films of different thickness, in different amounts and at two different temperatures. A good correlation with the prediction has been obtained. Any differences between prediction and reality can be attributed to input data uncertainties.
