Summary

DAIRY INDUSTRY EVAPORATORS HAVE IN THE PAST BEEN STEAM HEATED AND OPERATE WITH STEAM JET INDUCTION TO LOWER VAPOUR PRESSURE AND INDUCED EVAPORATION. IN GENERAL THE STEAM REQUIREMENTS HAVE BEEN HIGH EVEN WHEN UP TO SEVEN EVAPORATOR STAGES ARE USED WITH RECYCLING OF STEAM. TO INCREASE ENERGY EFFICIENCY, MANY LARGE SYSTEMS HAVE BEEN BUILT USING CENTRIFUGAL COMPRESSORS WITH ELECTRIC MOTOR DRIVE ON MULTIPLE EFFECT EVAPORATORS. THE DEVELOPMENT OF EFFICIENT TURBOFANS HAS ENABLED A FURTHER REDUCTION IN PLANT COST TO BE REALISED FOR THESE LOW PRESSURE DIFFERENCE APPLICATIONS. D.W.H.
