Summary
The influence of the storage conditions on the commercial value of bananas with various degree of maturity at various reasons is considered. The interrelations of technological operations with the basic processes of life cycle of fruits is shown by breath and evaporation of moisture. The methodology of the forecast of losses is offered on the basis of use of criteria of quality, both normative values, and a new method of definition of the level of the ripening degree on the dynamic change of the chemical structure of fruits.
