Summary

PHYSICAL PARAMETERS OF FRUITS WERE DETERMINED ON THE INITIAL DAY AND COMPARED WITH THE RESULTS OBTAINED AFTER 18 DAYS OF STORAGE AT 278, 283 AND 293 K (5, 10 AND 20 DEG C). THE RESULTS OBTAINED INDICATED THAT PRESERVATION OF THESE FRUITS DURING 18 DAYS AT 283 K PRODUCED LESS VARIATION IN THEIR PHYSICAL CHARACTERISTICS COMPARED WITH THE OTHER CONDITIONS STUDIED (278 AND 293 K). THE PRESERVATION AT 278 K SHOWED SYMPTOMS OF CHILLING INJURY.
