Summary
Heat transfer modelling methods were compared with field measurement results to produce simulation and experimental dimensionless temperature ratio versus cooling time curves for peaches. The model reasonably predicted 7/8 cooling times, and in a more refined form could be of benefit to the horticultural industry.
