Summary

A numerical model for the simulation of the simultaneous heat and mass transfer, with surface water evaporation during the refrigeration of respiring fruits and vegetables was developed. The model was tested against experimental date for the refrigeration of individual apples with and without previous surface wetting to enhance cooling speed by water evaporation.
