Summary
A relationship enabling the determination of the allowed storage time of frozen fish is proposed. The coefficient of stabilization is determined by the relative coefficient of quality for the pre-determined time period. The criterion of confidence of the design value of the quality coefficient of the frozen fish is its sensory evaluation.
