Summary

After a short review of current regulations for the storage and retail display of perishable food, the author gives the results of several investigations on the temperature of food in display cabinets. The effect of the environment on the performance of commercial display cabinets together with means to improve them are discussed. Current installations and their actual operating conditions, French and future European standardization are also described.
