CHANGES IN THE MICROFLORA OF ROCK CODFILLETS EXPOSED TO AIR AT 277 K (4 DEG C) AFTER STORAGE IN AN ATMOSPHERE CONTAINING 80% CO2 AND 20% AIR. MEASUREMENTS OF CO2 CONCENTRATIONS AT THE SURFACE AND THE CORE OF FILLETS SUGGEST THAT THE RESIDUAL INHIBITING EFFECT IS NOT DUE TO CO2 RETENTION ON THE SURFACE BUT RESULTS FROM THE MICROBIAL ECOLOGY OF THE SYSTEM.
