Summary

Selective-permeability films are the key to modified-atmosphere packaging. The range of permeabilities available must be broad enough to cover the very dissimilar needs of fruits and vegetables in terms of gas composition. In recent years, microperforated polypropylene has become more widespread, meeting some of the required performance levels but with variable results related to the specific conditions of manufacturing and use. The interruption in the cold chain observed in the sector (not including washed, ready-to-use fresh produce) poses an obstacle to the growth of this technique. The development of variable permeability films and active packaging materials can help enhance the role of this type of protection of fruits and vegetables in the distribution circuit, particularly for products subject to major changes or slightly processed.
