Summary

As they travel through the distribution/marketing chain, chicons may undergo various types of deterioration that depreciate their market value and discourage consumption. Various studies have been conducted to highlight the factors that influence the quality, and the measures that can limit this deterioration. This is the case of nitrogen fertilization, forcing conditions and varietal sensitivity, cold, and packaging. There must be continuity between the quest for crop quality and the preservaition of that quality through the distribution channel. A predictive test of chicon behavour has yet to be developed.
