Summary

COMPARING THE EXTENT OF DECAY AFTER STORAGE FOR 4-9 WEEKS AT 278-286 K (5-13 DEG C) WITH LONG TERM STORAGE FOR 5-7 MONTHS AT 273-274 K (0-1 DEG C). RESULTS HAVE SHOWN THAT THE OPTIMUM STORAGE PERIOD SHOULD BE ABOUT 6 WEEKS AT A TEMPERATURE OF 283 K (10 DEG C). UNDER THESE CONDITIONS, CARROTS ARE LESS SUSCEPTIBLE TO FUNGAL ATTACK AND RESULTING DECAY. THE FUNGUS R. CAROTAE IS A SERIOUS PROBLEM DURING LONG TERM STORAGE BECAUSE IT PROLIFERATES AT A RELATIVELY LOW TEMPERATURE, IE EVEN AT 273 TO 274 K.
