Summary

The theoretical and experimental studies have been done to predict the optimum storage condition for 'Jinxiu' yellow peaches (Prunus persica L. Batsch.) during controlled atmosphere (CA) storage. The equations of entropy production rates for CA system were derived based on entropy control method of nonequilibrium thermodynamics, while the effects of different storage conditions on entropy production rates caused by aerobic and anaerobic respiration were analyzed according to the calculation results. The estimation range of optimum parameters for yellow peaches, by which the minimum senescence degree could be achieved, was given as 2-5% O2, 3-10% CO2 at 0-2°C. The theoretical analysis was verified by storing yellow peaches in a lab-scale CA system for 6 weeks under 4 recommended gas concentrations at 2 plus or minus 0.5°C. It is shown that CA storage using predicting parameters may keep the postharvest quality of yellow peaches effectively.
