Summary
During 1994-1997 fresh and frozen samples of fillets of Nile perch (Lates niloticus) were tested by sensory and microbiological methods, showing critical results due to high bacterial loads. Because of a ban on imports in July 1999 there had been only deep frozen fillets on the market along with some fresh fillets from Tanzania. The authors did some additional investigations in 1999 on 46 samples of frozen fillets of Nile perch to check whether there was a change or improvement in the hygienic status.
