Summary
Thermal behaviour of individual potatoes in a ventilated bulk store was investigated. Processes in an aerated potato bulk are examined during drying, cooling, aeration with cool, dry air, and warming. Characteristic curves for specific conditions are developed using mathematical modelling. Application of the results to the design and operation of potato stores is discussed.
