Summary
Freeze-drying requires the sublimation of ice and the desorption of water from the solids under vacuum. Therefore the process is used in the pharmaceutical industry for biological and medical products, in the food industry for coffee extracts, fruit pulps and spices and in the cosmetic industry for collagen and similar products. Examples are given for trends in freeze-drying.
