IT INCLUDES A SERIES OFTESTS CARRIED OUT AT THE LABORATORY AND IN A PILOT STORE BUILT FOR THIS PURPOSE IN ABIDJAN FOR THE OPTIMIZATION OF PROCESSING AND STORAGE CONDITIONS (COOLING, CONTROLLED ATMOSPHERE, PACKAGING) APPLIED TO YAM AND PLANTAIN BANANA. THE AUTHORS DEFINE THE PROBLEM OF FOOD SELF-SUFFICIENCY, THEY PRESENT THE OBJECTIVES OF THE PROGRAMME AND DESCRIBE ITS IMPLEMENTATION. J.R.
