Résumé

The term biogenic amines refers to the non-volatile amines such as cadaverine, putrescine, spermidine, spermine, tyramine, tryptamine and histamine formed in different types of foods. Biogenic amines are toxic substances which cause disease in man and animals. In spite of amines being considered as endogenous to food originating from plant matter, such as fruits and vegetables, biogenic amines are formed in other foods as result of microbial action during aging and storage. The authors present an overview of the bacteria responsible for amine formation and the factors which influence the formation of biogenic amines in fish and fish products.
