Résumé

A possibility of prolonged storage of two types of rolls by packing and storing in a modified atmosphere was analyzed. Regular and extra rolls, baked using a natural leaven, with no preservatives and anti-mould agents added, were stored in the modified atmosphere with three compositions and, for comparison, in HD-PE bags. On the basis of the analysis of physicochemical and sensorial results it was shown that only the modified atmosphere consisting of 100% CO2 enabled more than a double prolongation of rolls durability. Other samples were disqualified after 4 days.
