Résumé

B. cereus may survive, germinate and multiply in refrigerated extended shelf-life milk. In this study, milk samples were ultrapasteurized (138°C for 2 seconds), superpasteurized (96°C for 13 seconds) or pasteurized (74°C for 15 seconds) and stored at 4 plus or minus 2°C for up to 6 weeks. The results demonstrated that superpasteurization and ultrapasteurization make it possible to store milk at refrigeration temperatures for up to 6 weeks, whereas pasteurized milk should have a shelf life of no more than 2 weeks.
