Résumé

Oranges, harvested in Sao Paulo, Brazil, were stored for 15 days under ambient conditions (21 °C, 60% RH) or in cold storage (1 °C, 85% RH). During storage, ascorbic acid decreased by 20 and 8%, titratable acidity decreased by 14 and 8%, and the °Brix:titratable acidity ratio increased by 30 and 18%, under ambient conditions and in cold storage, respectively.
