Résumé

The increasing success of frozen fruit and vegetables is because of their quality. The raw material is more and more suitable to technical processes. The varieties available can better withstand modifications induced by treatment such as blanching-freezing, and undergo fewer changes during frozen storage. Innovations in freezing technology realized by the Individual Quick Freezing system give shorter times and high quality frozen products. The high professional degree achieved by all operators completes the frozen food industrial process.
