Résumé

Three blueberry cultivars grown in Italy (Blueray, Bluetta and Concord) were stored at -20 °C for 6 and 9 months. The cultivars were submitted to the analysis of the volatile compounds and some chemical-physical parameters. The GC/MS analysis of the volatile fractions pointed out that the percentage compositions of alcohols and aldehydes, responsible for the "green-fruity" note, decreased more remarkably than the terpenic compounds, responsible for the "floreal-woody" note. Linalcool increased during the first six months. Among the chemical-physical parameters, only the anthocyanic substances decreased during storage.
