Differential expression of chilling injury in clingstone peaches by modulating intermittent warming cycles.

Résumé

Miraflores peaches were continuously stored at the firm-ripe stage of maturity for 30 days at 0 °C or for normal ripening at 15 or 20 °C. A second group of fruit was subjected to three 1-day cycles of intermittent warming at 15 or 20 °C applied every 6 days during 30 days of storage at 0 °C. Chilling injury was manifested as the radiating form of internal browning, flesh scald and woolliness beside the stone. Chilling injury induced a sudden decrease in flesh firmness during continuous or intermittent warming storage at 15 °C. The ability of the fruits to attain a normal maturity index was closely related to the efficacy of intermittent warming at 20 °C in the alleviation of woolliness and internal browning.
