The effect of temperature on grain development and starch quality in barley.

Résumé

Barley cv. Blenheim and Triumph plants were grown from anthesis to harvest-ripeness in controlled environment conditions at 13 or 20 deg C. grain water content and grain DW were determined at 3 to 4 day intervals throughout grain development. The rate of DM accumulation was highest at 20 deg C, but the duration of grain-filling was shorter. Final grain DW was not significantly different between plants grown under both temperature regimes. Starch was extracted from grains of cv. Triumph grown at 13 or 20 deg C in high or low light conditions. The number of B-type starch granules/grain was affected by both light intensity and temperature. Gelatinization temperature was higher in B-type starch granules than in A-type starch granules.
