Résumé

Antimicrobial biofilms have been studied to be incorporated as internal lining in meat products packages, with the aim of extending shelf-life and improve the safety and sensory properties of these refrigerated products. Chitosan film, polylactic acid (PLA) film, methyl cellulose-chitosan film and edible film based on whey protein have been assessed in combination with different active substances with action by contact. DMC, Carvacrol, Thyme, Mirenat and Oregano were effective against all microorganisms studied. All of them inhibited the growth of pathogens like Listeria or Salmonella, except Mirenat for Listeria. It was showed antimicrobial effect for chitosan film and protein film, in combination with Mirenat and DMC. The best results were obtained with PLA film and bioactive substances showing antimicrobial effect in laboratory scale. Its interest was validated at pilot plant scale as lining of polystyrene trays inhibiting the growth of damaging microorganisms in the packaged meat products in refrigeration (4ºC).
