Résumé

A two-dimensional finite element model using CFD-generated heat transfer coefficient was used to calculate weight losses and heat loads during beef chilling. A central composite experiment was used to examine the effect of various combinations of air temperature (-1 to 5°C), air relative humidity (90 to 99%), air velocity (0.3 to 1.3 m/s) and carcass mass (90 to 230 kg). The calculations were carried out for radiation and no-radiation conditions. Weight loss was calculated after 20 hours of chilling and when leg centre temperature reaches 7°C, and heat load was averaged over the first hour and the first two hours. These results were then correlated against the input conditions using a second order regression. The regression model was tested against previous experimental data and where discrepancies occur, correction factors were suggested. The results could be used for preliminary design and quick calculations including Monte Carlo simulations.
