Determination of weight loss of frozen lamb carcasses during cold storage at conventional conditions.

Résumé

The weight loss of frozen lamb carcasses during 6 months storage at -18 °C was determined by three different methods: determining the volume of defrost water due to meat evaporation, reduction of moisture content and variation of weight in the carcasses. The results showed that the average weight loss through measuring volume of defrost water was about 1.8% and by the reduction in the moisture content of the meat was approximately 2.58%. The weight losses of meat carcasses measured by weighing systems with two different time schedules for the 6 months storage time were respectively 2.1 and 2.2%.
