Lettuce heads were contaminated with a known population of L. monocytogenes, and sanitized for 15 min. The sanitizing agents tested were acetic acid (0.3, 0.5, 1.0 and 1.5%), sodium hypochlorite pH 7.0 containing 100 mg/l active chlorine and sodium dichloro-isocyanurate also containing 100 mg/l active chlorine. After the prescribed contact time, the agent was immediately neutralized and a survival count made. The behaviour of L. monocytogenes in minimally processed lettuce, packaged in modified atmosphere (90% N2, 5% CO2 and 5% O2) was also studied, during storage at 4 and 15°C. Lettuce leaves contaminated with a know population of L. monocytogenes were sanitized with sodium dichloro-isocyanurate containing 143 mg/l free residual chlorine and then packed in 100 g portions in polypropylene and low density polyethylene packages. The organism was not inhibited at either of the temperatures used. At 4°C the population of L. monocytogenes present a slight initial increase and then remained stable up to the 21st day of the storage. At 15°C, the population of L. monocytogenes increased by 3 cycles in the 7 days of storage. The best sanitizer was dichloro-isocyanurate Na 100 mg/l. The process of MA permits the survival of Listeria monocytogenes in lettuces stored at 4°C and its reproduction was possible at 15°C.
