Résumé

Bacterial attachment to surfaces and the eventual development of biofilms is a survival strategy of Listeria (L.) monocytogenes in different environments. The presence of this microorganism on food industry surfaces can be an economic and safety problem since it can contaminate the foods processed there. Therefore it is important to study the characteristics of this pathogen and the first steps of biofilm formation in order to develop new techniques to prevent its adherence to surfaces. In this article, the attachment of L. monocytogenes to surfaces is reviewed, as well as different methods to avoid its presence in food processing industries.
