The effects of temperature and CO2 concentration on the growth of mesophilic aerobic count, pseudomonads, lactic acid bacteria and psychrotrophic, Gram-negative bacteria were investigated. Use of the Arrhenius equation for the temperature dependence of the growth rate constant and parameter estimates obtained under constant CO2 and temperature conditions only partially allowed prediction of the microbial evolution of minimally processed endive under dynamic conditions. A systematic underestimation of growth was observed, particularly under temperature shift-down conditions.
