Résumé

The freeze concentration is a separation technique that allows the concentration of solutions and also provides an easy ice purification whit relatively low energy. In this study, the progressive freeze concentration (PFC) was used to freeze concentrate whey at three cycles. The increase of soluble solids (°Brix) of whey and the purity of the ice formed were analyzed. Besides that, calculations of efficiency, results validation, and energy consumption were also determined. It was possible to observe an increase of solids from an initial concentration of 7.66 °Brix to 17.77 °Brix at the end of the process. The efficiency was 63.39% at the first stage but dropped to lower values at later stages. The impurity ratio increased during the cycles indicating the retention of solids in the ice fraction. Finally, the root mean square deviation (RSM) values obtained were considered acceptable to a good fit and the energy consumption showed no differences between the stages. This technique proved to be a promising alternative for this byproduct from the dairy industry.
