Résumé

The quantitative aspect of bacterial flora from muscle, gills and intestinal contents of Indian shad (Tenualosa ilisha) was evaluated during ice storage in insulated polystyrene and wooden boxes. The initial total bacterial count in the muscle of the fish stored in insulated boxes was 3.5 x 10000 cfu/g and increased to 1.8 x 1 thousand million cfu/g after 18 days when the fish became organoleptically unfit for consumption. The intestinal contents contained the highest load of bacteria, followed by gills. The bacterial flora of the fishes stored in wooden boxes showed comparatively high initial count for muscle, gills and intestinal contents. The bacterial flora of the different parts of the fish kept in ice in wooden boxes increased rapidly during storage for 8 days, the bacterial load exceeding those of fish stored in insulated boxes for 18 days. Initially, the coryneform group was predominant in both types of storage followed by Micrococcus, Achromobacter and Aeromas. No Enterobacter was found in muscle and gills initially. No Pseudomonas was observed.
