Résumé

Ambrunés sweet cherries were stored for 3 weeks at 0 °C in air (control), under 20% CO2 controlled atmosphere or under 20% CO2 shocks for 24 hours every 6 days of conventional storage. The individual content of anthocyanins, flavonols and hydroxycinnamic acids was measured by HPLC at the end of cold storage and after shelf life. The results show that intermittent CO2 applications have proved to maintain anthocyanins, flavonols and hydroxycinnamic acid content after both cold storage and shelf life periods. Consequently CO2 shocks technique could be a good alternative to use of controlled atmosphere.
